Some regard the "Huy Fong Foods" company as the SAVIORS OF FLAVOR. I know I do. They're the noble people responsible for the deliciousness known as Sriracha: the greatest hot sauce that the world has ever known.
I remember the first time I tried the rooster sauce. It was the spring of 2006 at a pho restaurant called "Pho Kim" (seriously, I'm not kidding, it was the family's last name). I was with my buddy Greg, or 'Fish' as we called him. I had never had pho before, but had lived in Seattle for about six months and had seen the word EVERYWHERE but had no idea what it was.
Then I tasted it: that spicy, burning, and violenty-firey sauce. Sriracha and I were instant lovers, and I knew it was real. From that day on, the cock-sauce and I were inseparable. We did everything together, ate everywhere together, and traveled the country together (not really, I'm just being romantic). But now that love affair might come to an end. The company Huy Fong is in trouble due to the beautiful odors of Sriracha emanating from the factory, causing irrating eyes/throats/mouths/stomachs near the town it's produced. Babies.
WHAT CAN WE DO? I don't know. But I found a website that claims we can "make it at home" and "it's easy." Pfft. Whatever.
Feel free to try it. The recipe/article is HERE.
